Just as the ‘big’ T’rumoh is taken by estimation - כשם שתרומה גדולה ניטלת באומד

Summary:
According to ריב"י all תרו"מ (including מע"ר and מעשר בהמה) may be taken מאומד. However, תוספות is not certain whether אאב"ג would agree with ריב"י regarding מע"ר and מע"ב. They both agree that if he gave more than a tenth by תר"מ that it is not מקולקל.

Summary:
According to אאב"ג one should take מעשר (including מע"ר and תר"מ) only מאומד. However according to the רבנן only תר"ג should be taken מאומד but not מעשרות. However it is valid (but not משובח) if one took מעשר מאומד.

Similarly Trumas Ma’aser is taken by estimation and thought - כך תרומת מעשר ניטלת באומד ובמחשבה

Summary:
According to רש"י we derive מחשבה by תר"מ directly from ונחשב and the רבנן disagree with אאב"ג regarding מחשבה (and אומד), while תוספות maintains we can derive מחשבה by תר"מ for תר"ג and the רבנן agree with אאב"ג regarding מחשבה.
